What is Good Food?

This course will examine current controversies in food policy from a variety of ethical, political and esthetic perspectives. Each student will be required to focus on a single commodity for the entire course and trace its origin, production methods, processing, marketing and consumption as well as the environmental, social and gastronomic impact of these factors. Students will be exposed to a broad range of methodological tools from many different disciplines in helping them define what makes their particular ingredient and products made from it good or not. Grading for the course will be based on a single 30-page paper written throughout the semester including active discussion and revision of writing in group sessions.

While this course is not designated as a Community Based Learning section, all research will involve practical application to the community and wider world, including how good food is an indispensable element in living a good life in concert with our fellow humans, animals and the environment.
